Healthy Low Carb Breakfast

This is the first of many healthy eating options we hope to post in the future. And what a way to start, with a power omelette :) This should take less than 10 minutes, so you have no excuse. So your ingredients are ;

jar of coconut oil

head of Irish kale

whole eggs or egg whites

seasoning if you like ( sea salt, black pepper, dry chilli flakes )

 

Heat your frying pan, whilst that is heating grab a couple of handfuls of kale to tear and wash under cold water. You can pull the kale off the stalks. 

When you pan is hot, add the coconut oil and spread it around the pan. You may need a splash cover as this oil might spit if too hot! Add your kale and fry for a couple of minutes. Beat 2-4 eggs into a jug, add a small drop of milk if you want. When the kale has softened add the egg mix to the pan. Let it set.

When you shuffle the pan and the omelette slides as one, it is ready to flip :) Yes flip. Do it over a clean clear table, just in case you get it wrong. You should do it in one motion successfully :) If you do not fancy flipping it, do it the sissys way and turn it with a spatula :(

Shuffle the pan after a minute or two and if the omelette moves as one, it's ready to eat. Add your seasoning then eat.

Enjoy with a nice cup of black coffee :)
