Indian Omelette

Indian Omelette for 2

Ingredients;

6 eggs

half red onion

2 tomatoes

handful of fresh coriander

half teaspoon garam masala

half teaspoon cumin

half teaspoon turmeric

1 red chilli

seasoning

To cook;

Heat a pan on a medium heat. Beat the eggs in a mixing bowl and season. Chop the onion, tomatoes ( de seeded), coriander and add to the egg mix with the spices. Add a knob of butter to the pan.

Add half the mixture to the pan and spread the mix evenly. Let the eggs set for 2-3 minutes, then tilting the pan fold the omelette in half. When the eggs are cooked to your liking, slide the omelette onto a plate. Repeat the same with the rest of the mixture.

You may add spinach leaves to the omelette when served. If you don't like spicy food, take the seeds out of the chilli.
